You're in luck on this one - there's a script that comes with OSX called:
"Replace Text in item Names"
You'll find it in: /Library/Scripts/Finder Scripts/

For the ultimate in convenience be sure to add the script menu to your menu
bar... Then you can run the script on the current window anytime you
discover files named with "/"

-- don't worry about dup name conflicts - the script handles this (I think
you get an error message)

However... The script does not seem to be recursive.
