Where can I read up on AppleScript directory path specifications in general?

Look the the Standard Additions scripting addition by using the Script Editor, selecting Open Dictionary… from the File menu, and scrolling down the displayed list to Standard Additions. The particular command you are wanting to explore is 'path to' in the File Commands suite.
