Our favourite application has "applescript://" of course - but I don't want
to discuss it as I wasn't very popular when I tried using it on the list :-(

As well as the usual list of internet protocols, you'll probably come
across: 'file'; 'help'; 'itms'; 'rtsp'; 'pnm'; 'ical'; 'webcal'; 'sherlock';
'guikit'.

Haven't seen a document that covers them all. Just check the app that you're
interested in.
