Dustin,
there is the native XPress Script Menu script "Each Page as EPS".
But you should get the optimized and expanded version of
the Script Menu script collection:
<http://www.fachhefte.ch> / Click the link "AppleScripts" and
open the folders "mac_os_x_e" and "min_qxp_6_1" and select
the file "Quark_6.x_scripts_e.sit". This archive is 420KB and
contains a description of the scripts.
With the expanded script "Each Page as EPS" you can select
a layout and define the range of pages to save.
