Hmm. Interesting question - I understand where you're coming from but hadn't
considered that viewpoint before.
The short answer is there *is* no list of 'shell scripts that are
implemented in AppleScript'. 'do shell script' can run just about any
command you'd run in terminal.app (the main exception being interactive
commands which aren't handled well).
So the real answer is 'anything you can do in terminal.app' which is a very
extensive list, and subject to change depending on what additional software
the user has installed on their machine.
FWIW, I think 'do shell script' is the wrong way to get the specific
information in your example (date elements), but that's another discussion.
