I've not been following this thread, but something caught my eye, so, just in case anyone hasn't mentioned it yet;
you could directly (and pretty easily) script a text export from a pdf using DevonThink, although it *might* require the Pro version which is still in a closed beta. I only have the pro beta at the moment, so I can't check the standard version.
Sorry is that was already covered or its not relevant.
