Not quite what you're asking, but O'Reily has a
book: Learning Unix for Mac OS X Panther

I'll second that. You don't need to go to New
York for training, and as a self-employed person
that's an expensive outing considering how
unnecessary it is to achieve your goal. You can
do all you want with a couple of good books and
your terminal application open in front of you.
I don't own the O'Reilly book, but a colleague
does, and he said it's very good (he's a
long-time UNIX user and a Mac jedi, so I put a
lot of stock in his opinion). I do own several
other UNIX books and the material you mentioned
in the OP is covered in them, and much, much
more. There are small differences from one UNIX
to the other, so the O'Reilly book, because it's
specific to OS X, is probably a good one for a
Mac user.
But then, if some client is paying your freight,
maybe it's worth the trip, if you find New York a
compelling destination. But if I were in your
situation I'd get a couple of good UNIX books,
spend the money to rent a little chalet in the
mountains for a week, pack up my laptop and
female companion, and head off for a little
learning holiday.
