Working from Mail's dictionary, I see that one can get the 'content' of a message or the 'source' of a message.

If a message is HTML and I say:

set theMessage to the content of message i etc…

Only a footer added by the listserv is captured. The rest of the message is returned simply as '?'

If I say:

set theMessage to the source of message i etc…

Everything in the message (including a lot of stuff I don't want) gets returned.

How do I get just the text I see in a message window?

For now you don't, unless you feel like parsing HTML yourself. There is a bug filed on this.
