Apologies if this has been said already, I think that the information you are seeking can be found here:


/System/Library/PreferencePanes/DateAndTime.prefPane/Contents/Resources/DateTime.prefPane/Contents/Resources/[your country].lproj/time.strings

Note that those files have the same format as Smile's localization dictionaries so, in case you're working with Smile, you would just rename and copy those files where suitable and have any dialog or Smile tool take them into account without any additional hassle.
