Mostly Finder, TextEdit, Mail, iTunes, OmniGraffle, iCal, iPhoto, Smile, System Events; that sort of thing. I've tried scripting Eudora, but that's always been a disaster. I've also dinked around with stuff like FileMaker, InDesign and PageMaker in the past. I guess there's some cool things I'd like to do with Illustrator too (AI8 is one of my favourite apps, though I don't use it so much since I left full-time publishing) but can't afford the upgrade, alas. Anyway, most of my AppleScript-related work these days is on the implementation side - projects like appscript, MacPythonOSA, HTMLDictionary and TextCommands.
