You would have to find document

~/Library/Preferences/com.apple.LaunchServices.plist

You would need to edit the key values to change the application you want.

Paste this in Terminal:

defaults read com.apple.LaunchServices

There should be a way to write the values to the key you want with the
defaults command but I don't know enough about it. Maybe someone else does,
or study the manpage:

man defaults
