This is fairly easy.

1. Save the script as an application bundle from Script Editor.
2. Select the application bundle (right-click) and choose "show package
contents."
3. Navigate to "Contents/Resources." You'll see "applet.icns," the
default icon. That's where you will save the new icon.
4. Find the image you want to use as your icon. If it's not saved as an
icon (icns) file, import it into Icon Composer (comes with the Developer
tools). Import the image as "thumbnail 32-bit data" to get 128 x 128
(large size).
5. Save the file as an "icns" file. If you want to keep things simple,
navigate in the save dialog box to inside the AppleScript application
bundle (you can do this from Icon Composer) and just save the file as
"applet.icns" over the old file inside the application bundle.
6. If you save it under another name, you will have to edit "info.plist"
with the value of the new icon file name.
7. You may need to force-relaunch Finder to have the new icon show up.
Then, launch your app bundle to test the new icon.
