File types/creator codes

The current update patch for Tiger (10.4.7) breaks my default file associations for XML files (which I want to open in TextEdit).

I had these working fine before. I'm not necessarily sure what the default ordinary (user-level as opposed to having to write a script) method for doing this is, but I _think_ I used 'Open With'/'Always Open With' on the context menu (The reason I'm not sure is that I sorted this out about four months ago and can't easily remember what I did; I had TextEdit opening all XML files between then and the update for 10.4.7, and suddenly there's a change after adding 10.4.7)

Now about half my XML files show Safari icons and the other half show TextEdit icons (and this is the same after trying log out/reboot/ repair permissions in case that helped). I just want all XML files to open in TextEdit as default.

I assume this is one of those horrible Mac-specific things[1] that it goes and does on its own without telling me, either creator code or file type. Is the normal user-level way of changing this (context menu)/'Open With'/'Always Open With'? If this hasn't worked, what should I do? Should I try to work out how to make AppleScript go through all the files in subfolders in my documents directory and make sure they use TextEdit---and if so, is it the type or creator code I'm falling foul of?

[1] I love my Mac mini. I love Tiger. I think the Mac has some weird historical dependence on things it seems to want to hide from the person _using_ the Mac...
