You also need to restart the dock after you've edited the .plist:

You're kidding me. The only way to do this is to write to a plist?
Good Grief! (picture of Charlie Brown with a hand to his head and a
dark squiggle above him).
I guess I'll forget it then. I assumed (wrongly, apparently) that
there was an AppleScript method of adding a program icon to the dock.
Example: You install a new program and ask if the user wants to add it
to the Dock.
