As it happens, you don't need any scripts at all to do this -- Mail's rule criteria can do this for you. Pick "Any attachment name", "Ends with", and enter ".gif" in the text field. (You might also try adding "Message content", "Is equal to", and any empty string. Set the "any" or "all" criteria switch as you desire.)
