A quick look around the IANA list of official MIME types
(http://www.iana.org/assignments/media-types/) doesn't reveal any
Applescript type - nor, for that matter, types for code in any other
programming language except ECMAScript/JavaScript - not even
VBScript.
But if there were an AppleScript type, I'd expect it to be under
"application" ( not "text"; even "text/javascript" is considered
obsolete these days), and probably with a 'vnd.apple' prefix. If you
are controlling both the web server and browser, you can of course
pick whatever convention you want.
