All right, figured it out. Everything works if I read the entire doc, set the value of "servers" by reading the previous value, copying the new value to the end, and writing out the entire doc.

 I'm going to post a "Change Preferences" applescript to the list that will contain the generic functions for reading/writing/etc. That might some other poor soul.
