Because it's not available; the dictionary does not list "with properties" for the open command. It does, however, list "with options", so:
tell application "Adobe Photoshop CS2" open file immagine save current document in file "Macintosh HD:Users:palluan:Desktop:My file.jpg" as JPEG appending no extension with options {class:JPEG save options, embed color profile:false, matte:none, quality:10} without copying end tell
Thank you, I had to save with "options" not with "properties"...
