Are you sure that you can't do something easier than using HTML entities?
Specifying UTF-8 as your charset and providing plain UTF-8 files is
enough in most cases.

PS: if you choose Smile as your UTF-8 html editor, you can easily
check the html's validity (enter key), the xhtml conformity is it
applies (cmd-enter key), and you can view the web page (option-enter
key.)
