Recently ran into the same thing... with the same 'innocent intent'.
Have not as yet found a cure for the missing value for 'Gray'.
And in fact had to use this for others...
set color_space to color space of target_image as text
... else the dialog would (try to) display an Apple event, rather than
the sought after text.
Help anyone ???
