Does AppleScript put such a thing out as a matter of course? Is it different on Intel and PowerPC Macs?

No. It puts out in the current user encoding so you'd actually have to write the bytes into the output itself.


The world ought to adopt .U16 and .U61 for such file types but. . .

Something sane like the above would do just fine. I've used .utf8 and .u8 myself.
