make archive if each folder on a share

I'm guessing this is the right list...

Anyone know how to, at a specific time, make a archive of each folder on a drive? I have a drive that is our main share (no system on it) and I would like to have the system make an archive of each folder at say, each new month. I've poked around but haven't seen anything on how to do this. We have used ACLs in the past but have put off by them recently. System is 10.4.*.

One issue I have is on folders that are set up after I make a script and include each folder name.
My esp is failing me so I don't know what the folder names will be. ;)
