I'm trying to do something slightly different with my swatches, but I think the thing I am running up against is that things like the name and colorĀ info are read only properties.... judging by theĀ Illustrator dictionary, anyway.
Nope, both have get/set access. Not sure how you're reading the dictionary. Try looking at the Illustrator AppleScript Guide.pdf. Or, better yet, get Script Debugger 4 - it really make scripting complex apps like AI a LOT easier.
