AppleScript is changing your strings to unicode which uses 16 bit bytes. For ASCII characters that are only 7 bits long that amounts to adding a null byte before each ASCII byte.

Have a look at the archives and search for unicode to find the current scuttlebutt that will expose proper English-like syntax to tell the Script Editor just what you have and want. It's be something like "as plain old 1984 text" but  guessing never works.
