Jem,

If by turning on/off visibility you mean enabling and disabling them, no it
is not possible.  You cannot even read the disabled/enabled status of a
calendar directly.  However, it is possible with some tricky methods to read
them by directly parsing some xml. I imagine it would be possible to set the
appropriate key values in the xml also, but for sure that would require
quitting and relaunching iCal first.  The parsing method is also different
on Leopard & Tiger.  If you want more info, feel free to contact me
