I'd prefer something like 'shell quote' or 'shell escape'. That's because 'quoted form of' doesn't make any reference to the medium for which it's quoting. For instance one can speculate on a future version of AppleScript supplying other types of quoting suitable for different utilities: XML quote, C99 quote, etc.
