Mail has a very good AppleScript dictionary. You have many good
examples of scripting Mail on your machine. Look in here for examples:

Check out "Crazy Message Text" to start.
Yes, I've already looked for examples using "sender". I can't find
anything close.
Search the list archives for "mail reply" The link is at the bottom
of every list message.
Nothing relevant found.
Open Mail's dictionary with Script Editor and check that out too.
Yes, as mentioned in my initial post, I've looked through it.
It lists "sender" as an "object" (or something - I'm not familiar
with the terms) but all attempts to get the "sender" variable result
in an error message. (I forget what the message was but basically
"sender" wasn't recognised.)
I'll have another look when I wake up. It's 1am here and my brain can
no longer function!
"Class" refers to objects of a specific type. For example, in mail
"message" is one of a large number of classes.
