Simon,
Have you tried Folder Action? It's really easy to do like this matter.
And the other answer is "use FileMaker Server". I know it's totally
not Apple Script, but f you host your databases on FileMaker Server
and use scheduled backup, you never worry about this.
Third answer is not AppleScript again. You can use my shell script
below, but it's for FileMaker Server too.
