Scripting Apple Mail to strip all but plain text alternative

Hello, I get a good deal of rich text or html email from clients.
These are not automated emails, but regular users. I can use the
Message -> Plain Text Alternative, but that has not state to it, and
it will not be remembered as soon as you leave the message.
Since I can go locate the mail file locally, strip out the non plain
text parts based on the content disposition, I know it works. The
trouble is I use IMAP, and a local change in the file system does not
seem to make it back to the IMAP server.
I am looking for an AppleScript that can strip out the non plain text
parts, or if possible, set the plain text as default.
On a side note, or possibly related, I would like to do the same with
regard to editing, and the people who send me non subject emails,
being able to add in a subject would be nice.
What is the best resource for Apple Mail related Apple Scripts?
