How can I take the text variable phone, which is comprised of the ten digits of a phone #, and split it up into 3 variables in which I can insert dashes?

ie:
phone_no_with_dashes = var1 + "-" + var2 + "-" + var3

set phone to "4089742042" --Apple Public Relations
set var1 to text 1 through 3 of phone
set var2 to text 4 through 6 of phone
set var3 to text 7 through 10 of phone
set phone to var1 & "-" & var2 & "-" & var3
