QuartzComposer:
If you can write AppleScriptObjC code, this sample will help you.

GraphViz:
Free visuallization tool.  Its data is text based "dot language". You can make text file from AppleScript and browse it by GraphViz viewer.

SVG:
Scalable Vector Graphic format. It is XML base data.


Simple HTML:
You can make HTML. You can make simple bar chart on html. Very simple solution.
