Richard, on my Mac, I have "ImageMagick" installed, which lets you
convert from EPS to PDF like this:

% convert foo.eps foo.pdf

That's pretty simple.

Also, see http://www.apple.com/pro/tips/epstopdf.html; preview does a
fine job of converting EPS to PDF.

Preview isn't normally applescriptable, but you can fix that:

http://www.macworld.com/article/53391/2006/10/previewscript.html

Once you've done that, you can write applescripts to manipulate Preview.

We also use ImageMagick for this also. We used macports to install and
made sure that ghostscript was installed as a delegate.
