I think you can do that low level, you need to read about UTI's.
There is an article about UTI (Uniform Type Identifiers) 's at ArsTechnica by John Siracusa which is a good starting point, and links to some more good articles: http://arstechnica.com/staff/fatbits/2009/09/metadata-madness.ars

If have no clue at the moment about your second problem.
But there is some info about how to make unscriptable apps scriptable, but this you have to google for your self. (Preview was the example. (it is scriptable under SL), the trick is to add a value into it's plist file, which tells it that it is scriptable.) I understood the hint I forgot such that every cocoa app is scriptable to a minor degree. i.e The standard suite might work. So go for the trick.

If somebody is more up to date on this issue I hope they comment it quickly.
