When I enter this in script editor:

set x to "/a/b/c/Jack's trip.jpg"
quoted form of x

I get this:

"'/a/b/c/Jack'\\''s trip.jpg'"

…'

Am I wrong? What does it all mean?

Did you saw that afyer the double antislash you get two single quotes, not a double quote character?
I guess that it makes all the difference.

I read the block '\\''

this way : enclosed between single quotes is the string \\ which is the way to get an antislash in the final string plus a single quote.
