yeah, but that would involve doing it one by one. But, I just realized that you can use the Inspector, and that will change just the selected documents. Select all the documents you wish to change, then press command-option-i (instead of command-i) to get the Inspector window. It looks very similar to the Get Info window, and you can change all the selected documents in it.
