Sometimes I get emails from Entourage users who are set to HTML or something similar like RTF. When I reply Apple Mail will keep the > symbol as hard coded HTML with Apple Mail's vertical pipe to the right. Eg:
>| what they said earlier.
On these emails, if I show raw source, I see an email that is plain text with greater than for quote levels not pipes.
I will copy the raw source and paste over the reply email to solve this. Perhaps you can get to the raw source via AppleScript giving you the text in the format you desire.
