While I haven't done any specific timing tests, I do know that Server is completely missing all of the UI code which is present in the client version, so it is inherently faster. However, since it shares the core model and functional code with the client, operations which do not involve the UI will be basically the same speed.
So, I would expect some speed up, but unless your operation involves UI updates (palettes and the screen) then I wouldn't expect much of a speed up.
