Hi Cameron,

S.J Louw has posted an installer package that not only executes the defaults-write command (mentioned by André), but also installs "AppleScript Application", "AppleScript Automator Action", and "AppleScript Droplet" new project templates to "/Developer/Library/Xcode/Project Templates/Application/". His blog details how to make a new Studio project in Xcode 3.2.2 under Snow Leopard here:

Works here using Xcode 3.2.3 on OS 10.6.6 and Intel hardware.
