Tough luck, that. Here are two ideas:
1) Give your app a crippled mode that allows it to work, even minimally, without changing the system clock.
2) Don't use the system clock at all. Write a clock into your app and then set it to whatever time you want.
I realize that number 1 may result in you not getting into the app store (although you might argue that your app doesn't "require" admin access, it just recommends it). I also realize that, lacking knowledge of your app particulars, number 2 might be altogether impossible.
