What works in practice may be very different from what one might expect. I've written and maintain several stay-open script applications that have been running 24/7 for several years (with peroidic system restarts, of course).
To stop one, I bring it frontmost and type command-period two or three times, which may quit the script outright. If not, the command-period has at least halted execution, so a command-q (or Quit menu command) will finish the job of quitting the app.
