When UI Browser can't see into a target application's UI element hierarchy or some part of it, it is almost always because the target application does not properly or fully implement the accessibility API. This is especially likely in an application that implements custom UI elements. 

But I have never used UI Browser with the simulator, so I'll add this to my list of issues to investigate. I'm working on version 3 now, targeting a release around the time that Mountain Lion arrives.
