If you can remove the password then you don't even need to open Terminal to do this. The easiest way to remove the password would be to use certificate based authentication - it's quite straightforward to set up. Google "key based ssh authentication os x" - here's an Apple article on it: http://developer.apple.com/library/mac/#documentation/MacOSXServer/Conceptual/XServer_ProgrammingGuide/Articles/SSH.html

Once you've done that your AppleScript becomes

do shell script "ssh myserver -l myuser open -a iTunes"

And that's it.
