Xcode is quite advanced. You could possible get into using AppleScript/Cocoa using Xcode now, but there would be a very steep learning curve.
I would stick with AppleScript used from the app "AppleScript Editor.app" along with using AppleScript from the app "Automator.app" using the action "Run AppleScript".
I think that it's desirable to learn some shell-scripting first from AppleScript and from Automator before tackling something as advanced as Xcode and AppleScript.
Once you feel comfortable AppleScript you could move on to using Xcode. Xcode would let you develop:
1. Mac apps that have the full capability of Cocoa with such features as a menu bar, custom windows, and custom documents.
2. Automator actions of your own.
Maybe Automator and the AppleScript Editor would be enough without ever having to learn the complexity of Xcode/Cocoa/Objective-C type of stuff.
