You still haven't read that book I recommended, then… ;)

Matt Neuburg's AppleScript: The Definitive Guide (O'Reilly) explains top-level entities and persistence (see Ch8) in depth. It also covers pretty much everything else about AppleScript in the kind of detail that you won't find anywhere else, as far as I know.
