That is complete AFAIK. However, if you want a fuller reference to the intricacies of the language try
AppleScript: The Definitive Guide by Matt Neuburg.
Aside from that, what each app does with the language can only be found out from the documentation provided by the developer (eg. Microsoft, Quark and Adobe all do comprehensive AppleScript scripting guides for their apps, to name just a few) and the included Dictionary (Script Editor shortcut: Cmd-Shift-O).
