Playing around Robert's problem, I created some tags.

I was able to remove them from the item to which I applied them but they are always available in the menu of labels displayed in the Finder Infos window.

In fact I found the descriptions of these recent labels in a file named : com.apple.LSSharedFileList.ProjectsItems.sfl

I booted from an external HD and deleted the file from my standard system.

Now, the recently added labels are gone but some older ones are always here.

Do you know where they may be stored ?

As a search in file contents return nothing I'm afraid that they are stored in hexadecimal strings like the the bookmarks.
