Before you down grade I’d try this. In you preferences go to the security panel
and look for assistive devices. There will e a list of applications. Add the
applications that have stopped working. If any of the AppleScripts are applets
or droplets add them too.
It sounds to me like your scripts are using GUI scripting ad you may simply
need to allow access.

I did this yesterday. I didn’t use recover mode though. I made and booted from
a bootable Sierra installer, erased the apfs partition from the Disk Utility
there, then installed Sierra.
