Hello Laine,
It seems that adding -fC to groff’s arguments allows to specify Courier as the
default font family.
See the man page of groff(1) for the -f option and the one of grops(1) for the
font families.

The “-fc” option works fine, but I’m unable to imagine the right construct for
the “.ps” (font size) option in my command line. The default Courier for my
command is much too large. Every way I’ve tried to add it so far messes
everything up. The line I’m working with now is:
ffmpeg -h full | groff -fC -T pdf | open -f -a /Applications/Preview.app
I’m stuck in Mojave, and I’ve installed a more recent version of groff with
Homebrew to get the pdf device option (“-T”).
