As far as window sizes go, open a new Finder window, and drag to optimal size.
Then click on the desktop, then back in the same window. All new windows will
now open to optimal size – but only for that login duration. The system reverts
to windows that are wider than they are long in subsequent logins.

I only use socalled "lateral" windows in macOS. Sure I know, that I can switch
to it by keying command-option-T, but I would also like new windows to open the
same way. Does anybody know of a preference in macOS where I could change that
behavior.
The same question goes also for the standard size of a new window, which is
ridiculously large but not enough high
