I had tried that syntax (for ASOC) but entered the wrong weight property. I suspect it will work like this for my DatePickers:
tell myTextPicker
-- set some properties
setFont_(NSFont's monospacedDigitSystemFontOfSize:11.0 weight:(current application's NSFontWeightRegular))
--set more properties
end tell
Can't test it until I can duck into 10.11 again.
